Ice Cream Substitute?

1/2 cup ff cottage cheese
1/2 cup frozen berries (any kind, even cranberries, can work)
I usually add 1-2 tsp Splenda, but that of course is optional

Blend in processor until really smooth.
The ff cottage cheese gets REALLY smooth and fluffs up with the frozen berries.
I use Splenda to give it an extra bit of sweetness, haven't tried it with Stevia.
A variation is:
1/2 cup ff cottage cheese
1-2 TBS chocolate protein powder
1/4 tsp almond extract
1/2 cup frozen cherries

This is one of my favorite combinations, and adds a bit more protein if I've been lacking somewhere during the day.
You can also just blend the cottage cheese with some cinnamon and a bit of sweetener, and then eat it like a dip - apples and peaches work really well with that.
And one I just thought of now - cottage cheese, black beans, some salsa, seasonings.....blend until smooth, and use as a dip for whole wheat pita or WASA crackers.
