One package of frozen spinach
2 eggs
Grated cheese (whatever kind you like)
Mix all together
Bake in muffin tins (she didn't tell me the temp so you'll have to experiment...ha ha).
You can freeze them and just pop them in the microwave for about 25 seconds for a quick snack.
