Heat oven to 400F
Place on tray to roast:
4 or 5 red peppers,
1/2 onion,
4 tomatoes.
You can add some cloves of garlic but put them in tinfoil with a bit of olive oil.
Roast for 45-50 minutes until peppers are charred
Remove skins and seeds from peppers and tomatoes
Place all veggies in blender.
Put blended veggies in a pot and add 4-5 cups of chicken broth and bring to a boil.
So yummy!
