Quinoa Cereal

You can prepare this one the night before!
Protein: 1/2 cup "milk" skim, soy or almond milk, 1 T pumpkin seeds, 1 T sliced almonds
Produce: 1/2 - 1 cup blueberries
Grains: 1 cup quinoa, 1/4 cup whole rolled oats, sea salt to taste

How To:
1. Prepare Quinoa - Placed well-rinsed quinoa with 2 cups water and salt in a saucepan, cover and bring to a boil. Turn the heat to low, keep covered, and simmer for 15 minutes.
2. When the cooking is complete the grains become translucent. If you are using pre-packaged quinoa, it is best to follow the directions on the package.
3. Combine 1/4 of the quinoa recipe with rolled oats.
4. Top with blueberries, pumpkin seeds and almonds and serve with "milk".
