1 can of salmon (bones and skin removed)
1/3 cup fat free plain yogurt or sour cream
1-2 egg whites
1/2 cup whole wheat bread crumbs
1/3 cup grated parmesan
1/4 cup chopped green onion
1/4 cup chopped red pepper
1/4 tsp garlic powder
1/8 tsp pepper
Flake salmon and blend in all other ingredients.
Divide into 3 or 4 burgers (depending on desired thickness)and form into patties.
Fry in a small amount of olive oil over medium heat until well browned and firm (usually 4-6 minutes per side).
Serve on a whole wheat bun with mixed baby greens and a lemon wedge.
I like mine with a creamy sauce. You can use tzatziki (very healthy and very good!) or make your own combining 1/3 c. mayo, 3 tbsp. grated lemon rind, 2 tbsp. dill weed. Enjoy!
