*From Aunt Clara's Kitchen
2 cups rice
1 cup black beans
3 cups water
2 1/2 Tbsp of oil
4 tsp tomato paste
1/4 cup chopped green peppers
1 pinch oregeno
1/2 tsp mashed garlic
1/8 cup capers
1/4 cup chopped celery
1 tsp parsley
1 tsp cilantro
1/2 tsp thyme
1 cube chicken stock
1 tsp salt
Heat half of oil in an iron pot
Add herbs, olives, spices, and salt
Stir while adding tomato paste
Add beans while stirring
Add chicken stock
Once well heated, add remaining water and bring to a boil
Add rice and stir regularly
When water has evaportated cover with lid and simmer on very low heat
Wait 15 mintues
Uncover, stir, add remaing oil
Cover again and wait another 5 minutes
Rice should be firm but tender
