Banana Nut Bread

1/2 cup vegetable shortening
3/4 cup sugar
1 large egg
4 tsp lemon juice
2 cups flour
1 tsp baking soda
1/2 tsp salt
1 cup mashed ripe bananas (2-3)
1/2 cup walnuts or pecans chopped

Preheat oven to 350 degrees
Cream shortening and sugar in electirc mixer til smooth
Beat in egg and lemon juice
Sift together flour, baking soda, and salt
Fold the mixture into the batter and blend well
Stir in mashed bananas and nuts
Pour into 9x4x3 loaf pan and bake 60-70 minutes
Turn out on rack to cool
