Mustard Crust:
1/4 cup whole-grain Dijon mustard
1/2 lemon, juiced
1/8 cup honey
2 tablespoons chopped fresh thyme leaves
2 tablespoons chopped fresh parsley leaves
2 teaspoon garam masala
1 teaspoon garlic powder
Salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
1 1/2 cup, roughly ground quinoa and
¼ cup ground pumpkin seeds
1 side of salmon, about 3 pounds, skin and pin bones removed
Make the mustard crust:
In a bowl, combine the mustard, lemon juice, fresh herbs, salt and pepper, and stir together.
Stir in the olive oil, and then the quinoa and pumpkin seeds.
Preheat the oven to 450 degrees F.
Put the salmon, skin side down, on a parchment-lined baking sheet.
Drizzle with olive oil.
Spoon the bread mixture onto the salmon and smooth with a spatula to cover completely.
Put the baking sheet into the oven and roast until the salmon is just cooked through but still translucent in the center, about 10 minutes.

Roasted Salmon with Mustard-Herb Crust
Dressed up Fish
Okay here is one thing I do to make fish less boring:
I take the fish fillet and I cover the top with thin slices of mango completely covering the top. Then I put some sesame seeds on top. I place it in a pouch I make from aluminum foil and bake it. Really good!
I do the same thing with tomatoes...I cover the entire top of the fish with thin slices of tomato and then sprinkle garlic over it and cover with aluminum foil.
Making the pouch makes it really moist.
This is great with tilapia and I do it with salmon too!
Healthy Salmon Burgers
1 can of salmon (bones and skin removed)
1/3 cup fat free plain yogurt or sour cream
1-2 egg whites
1/2 cup whole wheat bread crumbs
1/3 cup grated parmesan
1/4 cup chopped green onion
1/4 cup chopped red pepper
1/4 tsp garlic powder
1/8 tsp pepper
Flake salmon and blend in all other ingredients.
Divide into 3 or 4 burgers (depending on desired thickness)and form into patties.
Fry in a small amount of olive oil over medium heat until well browned and firm (usually 4-6 minutes per side).
Serve on a whole wheat bun with mixed baby greens and a lemon wedge.
I like mine with a creamy sauce. You can use tzatziki (very healthy and very good!) or make your own combining 1/3 c. mayo, 3 tbsp. grated lemon rind, 2 tbsp. dill weed. Enjoy!
