6 chicken breasts cut up
1-2 beaten eggs (I think I used 2, but Mindy's recipe only called for 1. I needed more than 1)Cornstarch
A few tablespoons of vegetable oil
Dip chicken in beaten egg and then cornstarch (I've also seen it done the opposite way, cornstarch and then the egg).
Lightly brown chicken in oil.
Lay in 9x 13 pan.
Sauce:
3/4 C. sugar
1/4 C. white vinegar
1/4 C. pineapple juice
1 T. ketchup
1/2 tsp. salt
1 tsp. soy sauce
Pour sauce over chicken.
Bake @ 350 degrees for 1 hour.
I doubled the sauce recipe last time, but used about 3/4 of it. The recipe doesn't make quite enough sauce as I like, but doubled is a little too much. So whatever you like to do!
