You will have A LOT left over after this recipe, so freeze it for later use in other salads, quesadillas, burritos, or any other chicken recipes you love!!<br /><br />FOR THE CHICKEN SALAD:<br />1 Tbsp. butter<br />1 Cup chopped onion (sweet or yellow)<br />2 cups shredded chicken<br />1/2 cup coarsely chopped walnuts (can be bought already chopped), toasted (optional)<br />1/2 cup mayonnaise<br />1 Tbsp. clipped fresh cilantro (I used about 4 times that much because I LOVE cilantro!)<br />1 Tbsp. lime juice<br />Salt and pepper (optional)<br />Bread<br />Baby spinach leaves<br /><br />Melt butter in a large skillet over medium low heat.<br />Add onion<br />Cover and cook 13-15 minutes or until tender, stir occasionally.<br />Uncover<br />Cook and stir over medium high heat 3-5 minutes or until golden<br /><br />In large bowl combine onion, chicken, and walnuts<br />Add mayonnaise, cilantro (I just cut it from the bushel with scissors), and lime juice.<br />Toss to coat<br />If desired season to taste with Salt and Pepper<br />Place chicken on bread and top with spinach leaves<br /><br />Makes about 5 sandwiches using full slices of bread. I served them on store-bought sweet rolls. Its a wonderful way to incorperate veggies into your family's diet. Here is a mashed potato recepie that I adapted from this book.<br /><br />1 lb baking potatoes-peeled, cubed<br />1/2 Cup cauliflower puree<br />2 Tablespoons butter/margarine<br />1/2 Cup milk<br />1 teaspoon salt<br />3 oz. grated parmesean cheese<br />1 1/2 cloves of garlic-minced<br /><br />Put the potatoes in a large pot and add enough water to cover them by about 3 inches.<br />Bring to a boil over hight heat.<br />Boil on medium heat about 15 minutes or until tender when pierced with a fork.<br /><strong>While potatoes are boiling:</strong><br />Put milk and garlic into a small saucepan and cook on medium heat for about 5 minutes. Set aside.<br />Drain potatoes and put in a bowl for mixing or beating.<br />Add milk, parmesean, salt, butter, and cauliflower.<br />Beat until desired texture is acheived!<br /><br />My husband claimed that these are the best potatoes I've ever made, but the only thing I did different from my usual recipe is add cauliflower. Blend.<br />Combine egg YOLKS and milk in seperate bowl.<br />Add to dry ingredients.<br />Stir in cooking oil.<br />Carefully fold in egg whites, don't over mix.<br />Pour into waffle iron and follow cooking directions for your particular iron.<br /><br />On my waffle iron this recipe made 5 BIG waffles.
